wow time flys.
well i have not given up on the blog. it is and will be a way of life again here soon. still working on this house. have the garage, attic, yard and shed to do in full and the storage room, laundry room and office to do again. the rest of the house needs an hour of tweeking again or so per room. hoping to get all of that done this week. would have been done with a good amount but mike totaled his car last week, car shopping and purchase and insurance and paperwork and easter and no sleep and research and all.... wowza. looking forwrd to the simpler things and my stomach is really looking forward to real food. i think i might do one week outside of my regular focus of new recipes and do one week of my favorite cassaroles etc. i am hoping by next week to be back and spreading the word again.

long week
well this is a long week. we have had a ton of cleaning and no time. alot of subs,...spagetti and mackydoos. now next week i am back to the blog i hope. there is a time to work and a time to play and sometimes they are one and the same and then there is just WORK.... soon soon

easy deviled chicken allrecipes

so at allrecipes i did the easy deviled chicken... because i only had 2 breasts instead of the 8 chicken breasts...i sliced mine into "tenders" and used the same amount of mayo, and crumbs. but i used 1/8 c. butter, 1/2 c. MIRICLE WHIP, 1 1/2 t. mustard, i c. crushed croutons, 3/4 c. breadcrumbs. i added a dash of emril essance like a tea. garlic bowder was probably a tbl. and a dash of oregano. i cooked it in a 400 degree oven for 45 min and then down to 350 for 10. though i dont think it is necessary. they turned out nice and golden. i would probably do it for 350 for 10-15 next time though. two breasts sliced at just under 1/3 in slice or so covered a 9 by 13 in pan. i definitely would take 8 breasts next time and use prabably cookie sheets like regualr tenders, just keeping it away from the edges and use 2 large sheets. i know i could eat half or all of this by myself now, but that is the hunger talking.....note i used miricle whip not mayo. and the notes i made were my alterations to the ingredients, otherwise i used the butter etc. but i didnt salt pepper the chicken...
the original recipe.
1/8 c. butter
1/2 c. mayo
2T mustard
8 chicken breast halves
salt petter
1 pkg herb stuffing mix
preheat oven to 350 and then melt butter, add to mayo and mustard and pour into pie pan (though mine was more like...pudding so i spooned)
season chicken with salt and pepper, roll chicken breasts in mayo and then dip into stuffing. place on lightly greased 9 by 13 and bake an hour and a half.

so for next time i would quadruple the recipe alterations i used...adding maybe a little more garlic and a little more mustard... a little. actually , there wasnt enough really to work easily with the breadings so i was thinking the ingredients were cheap enough i would probably make more. so i would make 6 times as much and make a whole bunch. enough then for like company or several meals...this would make 16 searvings...or 8 if you feed mike/.lol.
this is undoubtedly going to be a favorite and though it is far harder than buying premade tenders, it is so good and home cooked... and cheaper. goes so much further. and not processed chicken... ya! i will definitely make this again.

another day, TO MAKE UP.....boo. just means a better more complete meal tomarrow...
HERE'S TO SILVER LININGS....
another day with no time to cook a NEW recipe though we tried a new thing. a fried rice recipe and ya i boiled it so it was a wee bit cruchy. tomarrow. cleaning like mad in the morning. seeing grandpa and discussing logistics.... late lunch with a cousin and kids at mackydoos, not for the food of course,but for the let them loose play with germ x. then home naps for kids...hopefully. make a nice dinner. . . . and then.... more work... we will see. mad rush. attained pack and plays today,.. cooridinating sheets.....microwave...fridge and ...ya thats it today. we are down to some shelves to buy as needed and a few other things and one more gate. but the sound of typing drives mike bonkers..... and we would nt want that at eleven at night. so off to bed for a early am after another load of laundry...
