well it has been far too long since i posted. i have tried some new recipies including brownies and ribs....we will see what is next perhaps tonight. off to find an idea for pork chops. have fun.

wow time flys.

well i have not given up on the blog. it is and will be a way of life again here soon. still working on this house. have the garage, attic, yard and shed to do in full and the storage room, laundry room and office to do again. the rest of the house needs an hour of tweeking again or so per room. hoping to get all of that done this week. would have been done with a good amount but mike totaled his car last week, car shopping and purchase and insurance and paperwork and easter and no sleep and research and all.... wowza. looking forwrd to the simpler things and my stomach is really looking forward to real food. i think i might do one week outside of my regular focus of new recipes and do one week of my favorite cassaroles etc. i am hoping by next week to be back and spreading the word again.

well this is a long week. we have had a ton of cleaning and no time. alot of subs,...spagetti and mackydoos. now next week i am back to the blog i hope. there is a time to work and a time to play and sometimes they are one and the same and then there is just WORK.... soon soon

easy deviled chicken allrecipes

so at allrecipes i did the easy deviled chicken... because i only had 2 breasts instead of the 8 chicken breasts...i sliced mine into "tenders" and used the same amount of mayo, and crumbs. but i used 1/8 c. butter, 1/2 c. MIRICLE WHIP, 1 1/2 t. mustard, i c. crushed croutons, 3/4 c. breadcrumbs. i added a dash of emril essance like a tea. garlic bowder was probably a tbl. and a dash of oregano. i cooked it in a 400 degree oven for 45 min and then down to 350 for 10. though i dont think it is necessary. they turned out nice and golden. i would probably do it for 350 for 10-15 next time though. two breasts sliced at just under 1/3 in slice or so covered a 9 by 13 in pan. i definitely would take 8 breasts next time and use prabably cookie sheets like regualr tenders, just keeping it away from the edges and use 2 large sheets. i know i could eat half or all of this by myself now, but that is the hunger talking.....note i used miricle whip not mayo. and the notes i made were my alterations to the ingredients, otherwise i used the butter etc. but i didnt salt pepper the chicken...

the original recipe.
1/8 c. butter
1/2 c. mayo
2T mustard
8 chicken breast halves
salt petter
1 pkg herb stuffing mix
preheat oven to 350 and then melt butter, add to mayo and mustard and pour into pie pan (though mine was more like...pudding so i spooned)
season chicken with salt and pepper, roll chicken breasts in mayo and then dip into stuffing. place on lightly greased 9 by 13 and bake an hour and a half.

so for next time i would quadruple the recipe alterations i used...adding maybe a little more garlic and a little more mustard... a little. actually , there wasnt enough really to work easily with the breadings so i was thinking the ingredients were cheap enough i would probably make more. so i would make 6 times as much and make a whole bunch. enough then for like company or several meals...this would make 16 searvings...or 8 if you feed mike/.lol.

this is undoubtedly going to be a favorite and though it is far harder than buying premade tenders, it is so good and home cooked... and cheaper. goes so much further. and not processed chicken... ya! i will definitely make this again.

another day, TO MAKE UP.....boo. just means a better more complete meal tomarrow...

HERE'S TO SILVER LININGS....
another day with no time to cook a NEW recipe though we tried a new thing. a fried rice recipe and ya i boiled it so it was a wee bit cruchy. tomarrow. cleaning like mad in the morning. seeing grandpa and discussing logistics.... late lunch with a cousin and kids at mackydoos, not for the food of course,but for the let them loose play with germ x. then home naps for kids...hopefully. make a nice dinner. . . . and then.... more work... we will see. mad rush. attained pack and plays today,.. cooridinating sheets.....microwave...fridge and ...ya thats it today. we are down to some shelves to buy as needed and a few other things and one more gate. but the sound of typing drives mike bonkers..... and we would nt want that at eleven at night. so off to bed for a early am after another load of laundry...

looking forward...

looking forward to a new recipe from a friend....for something different and to accept a challenge. yougurt. made of other milks for allergies.... i want to try it with rice milk for the boys... as we are not sure they are not allergic, and i dont watn to take a chance too early. would be great. although she told me her yougurt didnt yog.....lol. so funny. that would be my luck. no yog. i would end up with urt. oh well. gotta give it a try.

i am only 4 loads away from being done with the laundry. i was down like at least 15.
did 3 loads of dishes before 5 oclock to get caught up on that and mike washed pots. took down christmas stuff.... not all but most. looks a little bare....or open i guess... gotta look up tomarrows recipe.... wish me luck. potatoes.... twice baked? or .....

so we have 995 followers to go before this can go public,... to the at community. so. today i made baked oatmeal. it was ok. i will have to do some fine tuning of the recipe as it was a little dry. the flavor as the recipe called for was kinda bland. the concept was good though. so off to the kitchen to try something new...

MCDONALDS DURING RUNNING TODAY, = REALLY SICK STOMACH. WISH I HAD THE ENERGY TO MAKE CHICKEN SOUP,... THOUGH THE WEATHER IS SO NICE, I DOUBT SOUP WILL FLY NOW. MORE LIKE SPRING FOOD. GLAD I HAVE A START ON SPRING CLEANING AND PURGING, BUT,... A LONG WAY TO GO. I TOOK DOWN THE WINDOW CLINGS OF JESUS AND THE SNOWFLAKES, AND I LAMENT A LITTLE ABOUT THE ANTICIPATION IN WHICH WE WELCOMED THAT SEASON OF LIFE. THE FIRST CHRISTMAS FOR THE BOYS AND KAYLAS 2ND. NOW SHE IS THREE AND SUCH A BIG GIRL. I THINK ON THE FUTURE AND WONDER WHAT NEXT YEAR WILL BRING. WITH THE ANTICIPATION OF HAVING THE CHANCE TO PUT IT ALL UP AGAIN, I TAKE IT DOWN, WAITING FOR SUMMER AND FRESH AIR, VEGETABLES AND FLOWERS TO COME, THEN HEAT AND THE ANTICIPATION OF A COOL DOWN. I SEE MY TOY SOLDIERS AND CANDY CANES OUTSIDE WITH THE WREATHS AND LIGHTS AND I HAVE A LET DOWN FEELING AS MY FAVORITE TIME OF YEAR IS PAST WAINING, AND AS MY SECOND FAVORITE TIME OF YEAR IS SOON TO ARIVE....I TRY TO THINK ON DAFFODILS,...THE ENTERANCE AND EMBRACE OF SPRING. stacked, stuffed, and loaded french toast.

stacked, stuffed, and loaded french toast
strawberry cheesecake version

texas toast.
8 eggs or so.
cup of milk.
1/4 t. of almond extract.
make as typical french toast

filling.
1 pkg of cream cheese.
1/4 cup of powdered sugar.
1/8 - 1/4 c. milk.
blend with beaters. be careful as it will splatter.

fresh cut strawberries.
fresh cut bananas.
homade heavy whipping crm, with sugar added.

stack toast, "frost" heavily with cream cheese filling.
layer bananas.
add more filling.
stack another toast. place a good handful of strawberries
on top. garnish with a healthy dollop of heavy whipping cream.

stacked and loaded for sure. woof. deliscous and filling. loaded.

this is my recipe and my take i guess you would say. we tried
cheesecake pancakes at ihop yesterday or so. they were nothing
special and instead they were blah...sugar. so i though i would
make a syrupless french toast. that is exactly what this is and it
is so good. the fresh strawberries (or any fruit) keeps it from
getting soggy and the sandwich effect of the stacking allows for
good dispersment of the cream cheese. the egg toasted bread allows
for good plate standing time without sog. it is beautiful and
appealing, but difficult to manage, so in the eating it becomes
not so beautiful. lol enjoy

today we just made stacked french toast. yum yum. definitley a keeper with the cream cheese and the heavy whipping cream, texas toast and fruit,....secret ingredient in the egg batter. ....yum yum -k

mexican rice

well today is mexican rice. it was supposed to be texas sheet cake too, but i suppose that will have to wait until tomarrow. we tore the house apart, it was already so, but we worked on cleaning ceilings, fans, laundry, dishes, floors etc. a lot more work yet to do. i just cant wait until it is done, the deep cleaning and then i will have more time to cook~!!!!! so the mexican rice calls for a lb of hamb browned, with taco seasoning and the water that calls for. add one can drained black beans and corn and tomatoes if you like. then top with shredded cheddar served over rice. this is healthy, easy and frugal.
so.....

use what ya have.
1 1/2 c. brown rice cooked in the stewed juice
1 quart home stewed tomatoes
1 lb browned hamburger
3 cans of sante fe corn
1 can of northern beans
1/2 orange pepper diced
and the taco seasoning

cook rice in juice, add veg and legume. brown burger and seasoning and pepper. combine. this makes a casarole of sorts.

how i would prefer to serve it. would be A: a soup. mexican style type chili
B: as a burito. dry it up with a little more rice, use more seasoning, mild and hot packets instead of the sams value brand which tends to be a little mild and or heat it up with some chili powder and fresh ground red pepper. serve in soft taco shells with sour cream and shredded cheese. the wonderful thing about this dish is that it is cheap and it is easy. it is also easy to alter to your specific families tastes. i would add some green onion too as a garnish, but mike doesnt like them. we did talk about putting sliced black olives on it. this really reminded me of a taco salad... and mixing the rice in the dish makes it easier to serve and less dishes.

National instituat of neurologic disorders and stroke. from NATIONAL INSTITUTES OF HEALTH. please check out the A.T. section of this so you can know why i am going to the effort of doing a blog. Again i am a mom who has a friend with a child with A.T. and it has changed who i am though i believe she doesnt quite know that. i am a mom of three little ones and i have lost my job. i have a provider for a husband, though we have had some rough times as of recent. i have been going to the food pantry for a year now and go to some other food distribution sources. i am on WIC and i get food stamps. so my recipes wont be fancy but they will be sumptuous and palatable. i am doing something i have to do anyways and i am doing something i love to do. i am just making a twist to that in that i am comitting to make new recipes which i never do :) . i am going to try to go outside my comfort zone and learn more about what i love. food and children. i am going to learn more about what i can do to help "M". if this is all i can do to help then this is what i can do. i will pray and try to put a face on this disease and i will try to raise some money in the long run. i plan on creating a A.T. fundraiser cookbook. katies kitchen blogspot. thanks for viewing. for the future. k

the inspiration

Well. this is a blog for A.T. I have a friend who has a son with A.T. More information on that to come. I am going to do 7 new recipies a week for my family and friends with trying to spend less than $50 a week. so this is not very polished. but it will get better. so i am trying new recipies and i will be trying my renditions of it as well. so i will do this for a undetermined abount of time.... and then at the end i plan to do a cook book and sell it for a fundraiser for A.T. any ideas.
